Cocktail Spider Meatballs

This one will please the adults and kids alike.  Use your favorite meatball recipe or frozen cocktail ones if you prefer.  Here's my favorite recipe for meatballs (thanks to my mom :) ).

The stuffing adds lots of flavor and substitutes for the bread crumbs!
1 lb ground beef or turkey
1 cup Bells Stuffing (secret ingredient)
1/2 onion chopped
1 egg
1 tbl minced garlic
2 tsp Italian seasoning
1/3 - 1/2 cup milk (depending on moistness)

Mix all together and form into small meatballs, about 1 - 1 1/2 inches.  Bake in preheated oven at 350 for 20-25 minutes.



For the Spider part you will need:

1/2 cup shredded yellow cheddar cheese
1 pkg of dry Chinese noodles
1 or 2 finely chopped black olives (for the eyes)
package of multi colored round tortilla chips

Once meatballs have cooled slightly (be sure they are still warm or cheese won't stick) roll each meatball in cheese pressing slightly so cheese covers well.  Use 8 chinese noodles per meatball, press into bottom for the legs.  Finally add two small pieces of the olive to make the eyes.  Return to the oven for 5 minutes to slightly melt the cheese.  Place Spider on top of a round tortilla chip for serving.
