Captain Crunch Chicken - a sweet meal!

Mr. Luau and I had this a couple nights ago, and it was DELISH! I'm definitely making it again soon. Strangely enough, his craving for it came from thoughts of the movie theater, where he originally had it. Except our version was baked, not deep fried - just as tasty, according to Mr. Luau!

What you'll need:
1 lb chicken breast
1 egg
1 cup Captain Crunch Cereal
3 tbsp flour

Preheat over to 400 degrees.
Cut chicken to your desired size. We kept them more in the nugget size, but they can be done in the "finger" size as well.  Crush the Captain Crunch cereal to your desired texture, either in a ziploc bag with a rolling pin, or in a bowl with a large spoon. We did a combination of finely crushed and barely crushed. Mix crushed cereal with 1 tbsp of flour, and transfer to a plate or shallow bowl.  In a separate bowl, beat egg (with a splash of water).  Remaining 2 tbsp of flour should be placed on its own plate or shallow bowl. 
First dip chicken in plain flour, then in egg wash, and lastly coat completely with Captain Crunch/flour combination. Place on cookie sheet and bake 10-15 minutes.

To get the crunch of fried chicken, at the very end of the baking time, spritz the chicken with non-stick cooking spray.  Turn oven to HIGH Broil, and place chicken back in oven under broiler for 1-2 minutes. Voila! Baked chicken with the crunch of fried!

Dip chicken in sauce of your choice - honey mustard, ranch dressing, etc. We chose to eat it plain and just enjoy the sweetness of the chicken.
