Ingredients:

  • 5 cups leftover corned beef & cabbage, chopped (yes, with the cabbage..you can omit if you like)
  • 1 onion, chopped
  • 1 pepper, chopped
  • 2 cloves garlic, diced
  • 4 potatoes, peeled and diced
  • salt & pepper
  • 1/2 cup beef broth, broth from beef & cabbage or water
  • 1 tbl butter or lard

Melt butter or lard in large skillet.  Add in onion, pepper and garlic and saute until tender, about 5 minutes.  Add in the potatoes and corned beef and cabbage, mix until incorporated.  Add in your liquid and bring to a simmer until potatoes are fork tender, about 10 minutes.  Season with salt and pepper.

Serve with a fried egg on top or as a side dish with melted cheddar cheese!!
